Save Hippogryphs. We seem to like them in a more general sense compared to other monsters.

I don't think we'll get 'good' undead. Undead are undead, plain and simple. We don't even know if the Green Knight IS dead Gilles riding around, for all we know, he could be a benevolent daemon (heresy, I know, but just pointing out the notion). I could see them giving us a ethereal knight unit, but it would be a 0-1 limit, rare, and 5 models max. The Green knight is a terror before his special rules, let alone a unit of 2+ armor save, 6/5+ ward save, loons with lances riding around. NOTE: I highly believe this unit will not come into existence, just more posturing.

I agree with Skaven's ideas on what will change, but I don't think we'll gain much in the magic department, maybe light and call it a day (as much as I wish for a lore of the Lady I understand why we most likely won't get it).
